(Oldstuff) Baked pasta with tomato and bacon
Serves: 2 or 3
Ingredients:
- 7 Rashers of streaky smoke bacon
- 1 Onion, thinly chopped
- 2 Cloves Garlic, pressed
- 1/2 to 1 tablespoon Chilli powder to taste
- 1 tablespoon sugar
- 1 large pinch salt
- 1 400g tin of chopped tomatoes
- 300g penne pasta
- 300g of medium cheddar cheese, grated
- (optional) Tomato & red pepper chutney
- 1 tablespoon oil
Method:
Heat the oil then gently fry the onion, garlic and bacon for 10 minutes then add the chilli powder, sugar and salt and stir well.
Add the tomatoes (including liquid!) and stir well again. Simmer for 20 minutes.
Ensure the pasta is cooked just as the 20 minutes are up.
Place a layer of pasta in the bottom of a greased dish, cover with the tomato sauce and then a layer of cheese. Repeat as necessary!
Place in a pre-heated oven for 30 minutes at 140C / Gas Mark 4.
Leave for a couple of minutes to cool and serve with Broccoli or similar.
I'm not a great fan of white wine, but I think this dish perfectly compliments a stiff Chardonnay.
